Last week I must've been prescient! I finally put in my salsa fresca
recipe, and this week we're getting all the necessary ingredients in our
shares -- tomatoes, chilies, cilantro, onion... be sure to check it out
if you missed it. Meanwhile, this week I'm kicking off a new series of
'recipes that use lots of box ingredients'. I've talked to more than one
member who was interested in these kinds of recipes, and so have decided

Green Soup
This was an 'end of the week' inspiration which used up a whole lotta different 'green things' I had in my fridge. I will tell you what I put in it, but feel free to experiment with your own variations! I'm not indicating quantity, because it is that flexible! The main flavorings are the garlic, soy (for salt), cumin and lemon. I think you can modify the 'green things' fairly liberally.
garlic
celery
green beans
broccoli and/or broccoli stalks
asian/mustard greens
zucchini
cilantro
ground cumin
lemon juice
broth of some kind: leftover water from boiling potatoes, or chicken
broth, or veggie broth...
soy sauce
pepitas for garnish (optional)
In a pot with a fitting lid, saute some garlic in a little oil briefly,
then chop and add all the veggies (except the cilantro), pour in enough
broth to cover well, bring to a boil then reduce heat and simmer, covered,
for about 15 minutes. Allow to cool a bit, then puree it all in a blender
with soy, cilantro & cumin. Add the lemon juice last, reheat, then
serve topped w/pepitas! Goes nicely with warm buttered tortillas.
