Roast Beef & Yorkshire Pud...no wait! What was I thinking??
These are supposed to be recipes for vegetables and fruits! Oop, sorry.
I guess my inner carnivore reared its grizzly (gristly?) head & howled
for equal time. We will not yield. Now...let's try again, shall we?
Pear Chutney with Raisins
1 tbsp. oil
1 large onion, chopped
3 med. pears, peeled, cored and cut into 1/2" pieces (about 3 cups)
6 tbsp. packed brown sugar
1/3 C golden raisins
3 tbsp. apple cider vinegar
2 tbsp. fresh lemon juice
1 tbsp. chopped peeled fresh ginger
4 whole cloves
Saute onions in oil over med. heat until tender, about 5 min. Add remaining
ingredients & bring to a boil. Reduce to medium-low & simmer until
pears are tender and mixture thickens slightly, about 30 min. Discard cloves.
Season to taste w/salt & pepper. Cool.
Would be good w/curried veggies.
(pssst! would also be great with pork or lamb chops! *!#ouch! hey!!)
Beet & Blue Cheese Spread
2 large or 3 med beets (about 1 lb.)
2 large or 3 med. apples, each peeled and cut into 8 wedges
1/4 C (1 oz.) crumbled blue cheese
1 tbsp. prepared horseradish
Leave 1" of root & stem on beets; scrub w/brush, wrap in foil, bake @ 400 degrees for 1 hr. or until tender. Cool. Peel, discarding stems and roots, and cut into chunks. Put in beets in food processor w/rest of ingredients & process well, scraping sides of bowl occasionally. Serve w/pita chips or carrot sticks or both!
